The Glaze:
I make this first and put aside for later. I personally find this quicker as these ingredients will be out already. This is what you will coat the chicken with at the end when its ready. 2-3tbsp Franks original hot sauce 2-3tbsp Soy sauce (dark)
4tbsp Sriracha chilli sauce
2tbsp Ketchup sauce
2-3tbsp Sweet Chilli sauce
1tsp Honey
1 Large chicken breast:
Double ingredients if want to make more. Wash your chicken people! Then cut into small/ medium pieces. Note: I usually marinate in a little garlic and ginger paste to get rid of that raw meat smell, but this is optional. If you want to do this, the ratio is 1tsp of garlic paste and half a tsp of ginger paste.
The Marinade: For the chicken, add jalapeño brine (salty water). This makes the chicken more flavoursome and juicy. Once all ingredients are in, mix well until all chicken is coated. 2-3tbsp jalapeño brine 3tbsp Franks original hot sauce 3tbsp sriracha chilli sauce The Flour:
This is the batter for the chicken, once you’ve made the batter - beat 2 eggs for dipping. For crispy chicken, we are going to double dip each piece of chicken!
1 cup lain flour 2 cups of cornflour 1tbsp garlic powder 1tsp smokes paprika 1tbsp Black pepper 2tsp cayenne chilli pepper Salt to taste Coat all the chicken first and then start to cook. You want to cook the chicken for about 5 minutes on medium heat until golden brown whilst turning half way. If you’re not sure, take one piece out and cut in half/ taste to check. The last part! GRAB THAT GLAZE! The stuff you made at the beginning. Heat up glaze for 2-3 minutes on medium heat and cook until thickens. Then turn off the heat! Really important you do this. Let it cool down for a 1 minute, now add in the chicken, make sure to coat everything in the glaze. Again the heat should be turned off. Once ready, plate up. Garnish: This is optional, I added red/ green chillies spring onion sesame seeds Lemon wedges
